Why I Chose Gluten Free

People often ask me why Zoe's Botanical Kitchen focuses on gluten-free recipes.

The answer isn't because I believe everyone should stop eating gluten. Far from it.

Why I chose gluten-free was because I wanted everyone sitting around my table to enjoy exactly the same food.

At Shed One Distillery, where I created our botanical-inspired Afternoon G&Tea, I met guests living with coeliac disease, gluten intolerance and other dietary needs. Time and again they told me how often they felt like an afterthought, served something different while everyone else enjoyed the "real" cake.

I wanted to change that. So I set myself a challenge:

Simple Soda Bread and Brown Rice with Olives and Rosemary.

Could I create gluten-free food that nobody felt was a compromise?

Over the past five years I've tested, tweaked and refined every recipe until I was genuinely proud to serve it.

The reaction has been wonderfully consistent: "I can't believe that's gluten-free!" That's still one of my favourite compliments.

But here's the thing...

Zoe's Botanical Kitchen isn't only for people who eat gluten-free.

Many of the recipes are naturally gluten-free because they celebrate ingredients that have always been gluten-free: fresh vegetables, fruit, herbs, pulses, ancient grains, nuts, seeds and dairy.

You'll also discover seasonal cooking, botanical flavours, preserving, baking, foraging, ingredient guides and simple techniques that any home cook can enjoy.

My aim has never been to create "free-from" food.

It's to create food that's full of flavour.

Gluten-free Quiche

Because, at its heart, Zoe's Botanical Kitchen is about curiosity.

It's about slowing down, noticing what's growing, trying unfamiliar ingredients, embracing the seasons and sharing good food with the people you love.

Gluten-free just happens to be where that journey begins.
